Bacon Blue Cheese Dip Recipe

This velvet-rich and deeply flavored homemade blue cheese dip recipe, with smoky crisp bacon, and lots of fresh herbs is the perfect dip for everything from hot wings and crunchy veggies to crisp potato chips. A wonderful, make-ahed dip that will be the first thing to disappear at any party.

  • Combine 1 cup sour cream, 1/3 cup crumbled blue cheese, 2 teaspoons lemon juice, 1 teaspoon salt, and 1 teaspoon Worcestershire sauce in a medium bowl. Gently fold in 1/4 cup sliced scallions, 2 tablespoons chopped parsley, and 4 slices crumbled bacon.
  • Transfer to a serving bowl and top with the extra strip of crisped, crumbed bacon and the extra tablespoon of chopped parsley. Serve with celery sticks, quartered radishes, sugar snap peas, and/or cherry tomato halves, or your favorite crunchy veggies.

Notes

  1. Make Ahead: This dip can be made up to 5 days ahead of time. Store it in an airtight container in the refrigerator. Stir well before serving. Leave off the bacon and parsley garnish until ready to serve. 
  2. Spice: For a little heat, add a pinch of cayenne pepper or a dash of your favorite hot sauce.
  3. Avocado: I've also added a ripe, diced avocado for more of a Cobb salad dip.
  4. Serving Suggestions: Serve with a variety of raw vegetables like celery sticks, carrot sticks, bell pepper strips, cucumber slices, broccoli florets, or cherry tomatoes. This dip is also delicious with crackers, potato chips, tortilla chips, breadsticks, pretzel bites, or as a topping for baked potatoes or burgers.
