But what’s the difference between homemade chunky blue cheese dip and blue cheese dressing? Blue cheese dip is like dressing, but its base is much thicker, not runny. Therefore, the blue cheese takes center stage has a richer, more complex flavor than regular salad dressing. But we are taking this a step further and using smoky bacon in this recipe for an ultimate indulgent dip in that will knock your socks off.

What Type Of Blue Cheese To Use
There are not very many ingredients in this dip, so you want to use the best quality you can get for each of them, especially the blue cheese. It’s the star after all!
For the best blue cheese flavor, I like to use Maytag blue cheese or Point Reyes blue cheeseāthey’re my favorite. Other good options are Italian Dolce Gorgonzola (a tiny bit sweet and more mild) or a pungent blue cheese like Roquefort from France.
Any leftovers can be used instead of the Fontina in my cheesy polenta with Mediterranean vegetables, that would be a blue cheese-lover’s dream.
One blue cheese I do not recommend is using blue cheese crumbles, these tend to be dry and flavorless.
This Dip Could Not Be Easier
A few simple ingredients, little bit of chopping, crisping the bacon and your delicious dip is ready. Here’s what you need to make it:
- Sour cream. For the best creamy texture. Sour cream gives it a lovely creamy base, much better than mayo.
- Blue cheese. Good quality blue cheese like the ones listed above. These (or similar) are available at your local grocery store.
- Lemon juice. Fresh lemon juice from whole lemons please. You can also substitute white wine vinegar.
- Kosher salt. I always use Morton kosher salt unless otherwise specified.
- Worcestershire sauce. For that sharp umami tang.
- Scallions. AKA green onion.
- Italian parsley. Fresh parsley adds a nice herbal backdrop.
- Bacon. Any leftovers can be used to make my favorite chicken cacciatore recipe.
- Cracked black pepper. Freshly ground is always best.
Combine everything in a medium bowl and stir until combined. That’s it! You can serve this creamy blue cheese dip right away, but it does improve in flavor the next day, so make ahead is the key. Make sure to taste it before serving and add another pinch of salt if needed.
What To Serve With It
This cheesy dip is the perfect appetizer for any party from game day to a fancy holiday soiree. Here are my favorite ways to serve it:
- With fresh vegetables like carrots, radishes, cucumbers, celery sticks, sugar snap peas, bell pepper strips, and/or cherry tomatoes.
- For a Buffalo wings dip
- As a topping for baked potatoes
- With potato chips, crackers, pretzels, or breadsticks
- As a sauce on top of my double pork pork burgers or instead of the horseradish aioli with my roasted pork shoulder with root veggies
Can I Turn This Into Salad Dressing?
Sure! Making it a bit thinner and smoother would make a killer wedge salad that’s better than you get at your local restaurant!
To make it into a salad dressing, omit the bacon (you can still crisp it and sprinkle on top of the salad if you’d like). Stir in 1/3 cup buttermilk and you’ll have a lovely pourable salad dressing.
If you’d like it really smooth, combine everything in a food processor. For a lighter version, do 1/2 cup buttermilk and 1/2 cup sour cream.

Bacon Blue Cheese Dip Recipe
Ingredients
- 1 cup sour cream
- 1/3 cup crumbled blue cheese, about 2 ounces
- 2 teaspoons freshly squeezed lemon juice
- 1 teaspoon kosher salt
- 1 teaspoon Worcestershire sauce
- 1/4 cup thinly sliced scallions
- 2 tablespoons finely chopped parsley, plus an extra tablespoon for garnish
- 4 pieces bacon, well-browned and crumbled (plus 1 extra strip for garnish)
- Veggies for serving
Instructions
- Combine 1 cup sour cream, 1/3 cup crumbled blue cheese, 2 teaspoons lemon juice, 1 teaspoon salt, and 1 teaspoon Worcestershire sauce in a medium bowl. Gently fold in 1/4 cup sliced scallions, 2 tablespoons chopped parsley, and 4 slices crumbled bacon.
- Transfer to a serving bowl and top with the extra strip of crisped, crumbed bacon and the extra tablespoon of chopped parsley. Serve with celery sticks, quartered radishes, sugar snap peas, and/or cherry tomato halves, or your favorite crunchy veggies.

- Make Ahead: This dip can be made up to 5 days ahead of time. Store it in an airtight container in the refrigerator. Stir well before serving. Leave off the bacon and parsley garnish until ready to serve.Ā
- Spice: For a little heat, add a pinch of cayenne pepper or a dash of your favorite hot sauce.
- Avocado:Ā I’ve also added a ripe, diced avocado for more of a Cobb salad dip.
- Serving Suggestions: Serve with a variety of raw vegetables like celery sticks, carrot sticks, bell pepper strips, cucumber slices, broccoli florets, or cherry tomatoes. This dip is also delicious with crackers, potato chips, tortilla chips, breadsticks, pretzel bites, or as a topping for baked potatoes or burgers.
