Easy 5-Minute Kale Salad Dressing Recipe

My kale salad dressing recipe is a simple, easy to make dressing with fresh lemon juice, Dijon mustard, Parmesan, garlic, and honey. It’s bright, savory, and just creamy enough to coat every bite of your favorite kale salad.

I think we’ve all brought home a big bunch of kale from the grocery store with plans for a healthy dinner, only to remember that raw kale can feel more like work than salad.

The secret is a flavorful dressing that can stand up to those sturdy leaves.

Once it is massaged into Lacinato or curly kale, that intimidating bunch becomes tender, delicious, and dare I say, craveable.

Unlike many store-bought dressings, this one has enough acidity to soften kale without tasting overly sharp.

It takes just five minutes to make using basic ingredients and is equally good on grain bowls, roasted vegetables, and other hearty salads.

Here’s what you’ll need:

  • Extra-virgin olive oil: Choose a fresh (not rancid) olive oil. It makes up the base of the dressing and you’ll be able to tell if it has gone bad. I always like to use California Ranch Extra Virgin Olive Oil.
  • Fresh lemon juice: Give the dressing the acidity it needs to tenderize the kale; fresh juice tastes much brighter than bottled.
  • Dijon mustard: Adds tang and helps the lemon juice and oil stay smooth and fully combined.
  • Parmesan cheese: Melts into the dressing and gives it a savory, creamy finish; use nutritional yeast for a dairy-free and vegan version.
  • Garlic: Grated or finely minced clove adds flavor without overwhelming the lemon.
  • Honey: Softens the sharp edges of the lemon and kale; pure maple syrup works just as well and keeps the dressing vegan.
  • Kosher salt: Seasons the dressing and helps bring out the kale’s flavor.
  • Black pepper: Freshly cracked black pepper adds gentle warmth.

How to Make Kale Salad Dressing

Slowly stream in the extra-virgin olive oil while whisking constantly (or seal the jar and shake vigorously) until the dressing is completely smooth and creamy.

Pour the dressing directly over destemmed, chopped kale leaves. Use clean hands to firmly massage the greens for 2–3 minutes—the acid and oil will soften the tough fibers, turn the kale deep green, and make it far more tender and delicious to eat.

Whisk, Shake, or Blend

Whisking the dressing in a small bowl gives you the most control when slowly adding the olive oil.

A mason jar is the easiest option because you can mix and store the dressing in the same container.

For an especially smooth and creamy dressing, combine everything except the olive oil in a small food processor or blender. With the machine running, slowly stream in the oil until smooth and fully combined.

All three methods work, so use whichever creates the least amount of cleanup for you.

The Best Way to Prepare Kale for Salad

Rinse the kale under cold water and dry it well so the dressing sticks.

Remove the fibrous stems, then tear or slice the leaves into small pieces.

Both Lacinato (also known as Dino kale or Tuscan kale) and curly kale work well. Lacinato is naturally more tender, while curly kale’s ruffled leaves catch more dressing.

Don’t Skip the Kale Massage

Add the dressing gradually and massage it into the kale for 2 to 3 minutes.

The leaves should become darker, softer, and evenly coated without dressing pooling in the salad bowl.

Serve immediately or let the dressed kale rest for 15 to 30 minutes for an even more tender texture.

Easy Ways to Make It Your Own

  • Make it vegan: Use 1/4 cup nutritional yeast instead of Parmesan and 1 teaspoon maple syrup instead of honey.
  • Adjust the flavor: Replace 1 tablespoon lemon juice with apple cider vinegar, add a teaspoon of dried herbs like Italian seasoning, dried thyme, or rosemary, or mix in a pinch of red pepper flakes for heat.
  • Change the texture: Add a couple tablespoons of mayonnaise, Greek yogurt or tahini to make it really creamy.

More Ways to Use This Dressing

Although I created this homemade dressing for raw kale salad, its bright, creamy flavor works with plenty of other meals.

Drizzle it over romaine, shredded Brussels sprouts, white bean salads, grain bowls, roasted vegetables, or other fresh veggies.

The combination of fresh lemon juice, Dijon mustard, and Parmesan cheese is also delicious spooned over poached chicken or salmon.

Toss delicate greens with the dressing just before serving, but massage it into sturdy greens so they have time to soften.

Make-Ahead and Meal Prep Notes

Store the homemade dressing in an airtight container or mason jar in the refrigerator for up to a week. Let it sit at room temperature for 10 to 15 minutes, then shake or whisk before using.

Massaged kale salad keeps for about a day or so. Store crunchy toppings separately until serving.

Why did my dressing separate?

Oil and lemon juice naturally separate over time. Shake or whisk the dressing again until creamy.

Why is my kale salad still tough?

Remove the kale stems, chop the leaves into small pieces, and massage them firmly with the dressing for 2 to 3 minutes.

Can I use another kind of mustard?

Whole-grain mustard will work, although the dressing will have more texture. Yellow mustard has a sharper, more distinctive flavor, so Dijon is the best choice for this recipe.
