Copycat IHOP Strawberries & Cream Crepes Recipe
This copycat IHOP strawberry crepes recipe recreates the restaurant favorite with tender homemade crepes, sweet cream cheese filling, fresh strawberries, vanilla cream sauce, and whipped cream. It’s a decadent breakfast that’s especially good for weekend brunch, Mother’s Day, or Valentine’s Day.

My daughter Louisa and my father-in-law have one thing in common: their love for IHOP.
Whenever he comes to visit, that’s a non-negotiable stop. My daughter loves the pancakes, but Abuelo always orders the strawberry crepes.
So when they replaced the strawberries and cream crepes with fresh berry crepes we had a problem.
I got to work and tested and tested this recipe until I landed on something that is, dare I say, better than the ones at IHOP.
What Makes These Like IHOP Strawberry Crepes?
IHOP strawberry crepes are thin, soft breakfast crepes stuffed with a sweet cream cheese filling and finished with strawberries, vanilla cream sauce, whipped cream, and powdered sugar.
My version keeps that same creamy, fruity combination but uses fresh strawberries with a little jam and lemon juice for a brighter topping.
And even with the filling, sauce, cream, and powdered sugar, I feel these have the perfect amount of sweetness. They are definitely sweet, but not overly so.
Unlike thick American-style pancakes, these French-style pancakes stay soft and flexible enough to fold or roll around the filling.
IHOP Strawberry Crepe Ingredients

For The Crepes
- All-Purpose Flour: Gives the crepes structure while keeping them tender; regular all-purpose flour works best, but a 1-to-1 gluten-free baking flour can be used if needed.
- Milk: Keeps the batter fluid and easy to swirl; whole or 2% milk is ideal, but unsweetened non-dairy milk also works.
- Eggs: Add structure and flexibility so the crepes can be rolled without tearing.
- Melted Butter: Adds richness and helps the crepes stay tender; a neutral oil can work in a pinch, though butter gives the best flavor.
- Granulated Sugar & Vanilla: Lightly sweeten and flavor the batter; brown sugar can replace the sugar, and almond extract can stand in for some of the vanilla.
- Kosher Salt: I always use Morton kosher salt; table salt works too, but use slightly less.
For The Cream Cheese Filling
- Cream Cheese: Creates the rich, creamy center; use softened full-fat block cream cheese, or substitute Neufchâtel if that’s what you have.
- Powdered Sugar: Sweetens the filling without making it grainy.
- Heavy Cream: Loosens the filling; half-and-half works in a pinch, though the texture will be slightly thinner.
- Vanilla Extract: Adds warm vanilla flavor to the filling and sauce.
For The Vanilla Cream Sauce
Powdered Sugar, Heavy Cream, Melted Butter & Vanilla: These combine into a smooth, pourable glaze; if needed, use half-and-half or a little milk in place of the cream.
For The Strawberry Topping
- Fresh Strawberries: Provide the fresh, juicy topping; choose ripe, firm berries, or swap in raspberries, blueberries, or sliced peaches.
- Strawberry Jam: Intensifies the berry flavor and creates a quick glossy sauce; strawberry preserves or raspberry jam also work well.
- Lemon Juice: Brightens the strawberries and balances the sweetness; orange juice is a softer, sweeter substitute.
Whipped Cream & Powdered Sugar: Add a light, polished finish; either can be skipped for a less-sweet serving.
How to make Strawberry Crepes

Make the batter: Combine flour, milk, eggs, melted butter, sugar, vanilla, and salt in a blender. Blend on high for 30 seconds until completely smooth. Rest the batter in the fridge for 10–15 minutes.

Make the vanilla cream sauce: In a small bowl, whisk together the powdered sugar, heavy cream, 1 tablespoon melted butter, and vanilla extract until smooth, glossy, and pourable. Set aside.

Prepare filling & strawberries: Beat the softened cream cheese, powdered sugar, vanilla, and 2 tablespoons heavy cream together until smooth and spreadable.

In a separate bowl, toss the sliced strawberries with the strawberry jam and lemon juice to create a juicy syrup.

Cook the crepes: Heat a 8- or 10-inch nonstick skillet over medium heat and lightly grease with about 1/2 teaspoon of butter or cooking spray. Pour 1/4 cup of batter into the center, immediately tilting and swirling the pan to spread the batter thinly, trying to cover the entire bottom of the pan.

Cook for 1 to 2 minutes until set and lightly golden around the edges. Lift the crepes around the edges with a silicone spatula making sure the whole thing releases from the pan, flip, and cook for another 30 seconds. Repeat for 8 total crepes, adding 1/2 teaspoon of butter each time and lowering or raising the heat to keep the pan from smoking or getting too cold.

Assemble: Spread about 2 tablespoons of cream cheese filling down the center of each warm crepe, then roll or fold the sides over.

Serve: Plate two crepes per serving, spoon the glazed strawberries over top, drizzle generously with the Vanilla Cream Sauce, and finish with a swirl of whipped cream and a dusting of powdered sugar.

Why Let The Crepe Batter Rest?
Let the crepe batter rest for at least 10-15 minutes before cooking. This gives the flour time to fully absorb the liquid and the gluten time to relax, which makes the crepes more tender, flexible, and less likely to have pockets of dry flour.
Tips for Making the Best Strawberry Crepes

- Keep the batter thin: It should pour easily and spread quickly across the pan; if it feels too thick, whisk in a small splash of milk.
- Use the right heat: Medium heat gives the crepes time to set and turn lightly golden without crisping the edges.
- Swirl right away: As soon as the batter hits the skillet, tilt the pan so it spreads into a thin, even layer.
- Use the right pan: You don’t need a specific crepe pan (although if you have one that would be great) but any medium-sized non-stick skillet will work. I like my Le Creuset enameled skillet.
- Keep the filling soft: Room-temperature cream cheese makes the filling smoother and easier to spread without tearing the crepes.
Crepe Variations To Try
- Nutella Crepes: Spread Nutella down the center and add sliced strawberries, bananas, or a few chocolate chips.
- Mixed Berry Crepes: Swap some of the strawberries for blueberries, raspberries, or blackberries.
- Lemon Strawberry Crepes: Add finely grated lemon zest to the cream cheese filling and a little extra lemon juice to the berries.
- Pastry Cream Crepes: Replace the cream cheese filling with pastry cream for a more dessert-like version.
- Savory Crepes: Leave the sugar and vanilla out of the batter, then fill with eggs, cheese, ham, mushrooms, spinach, or roasted vegetables.
What To Serve With Strawberry Crepes

Whipped cream and powdered sugar are really all these crepes need, but if you’re serving them for brunch, I like adding something savory or fresh to round out the meal. Here are a few of my favorites:
- Eggs or tofu: Scrambled eggs or a savory tofu scramble balance the sweetness nicely.
- Breakfast Meat: Crisp bacon or breakfast sausage makes the meal feel more substantial.
- Fresh Fruit: Serve with berries, melon, or citrus for a lighter brunch.

How To Store Leftover Crepes
Let the crepes cool completely, then stack them with sheets of wax paper or parchment paper in between so they don’t stick together. Store them in an airtight container in the refrigerator for up to 3 days, and keep the strawberry topping separate so the crepes don’t get soggy.

- 1/2 cup powdered sugar
- 2 tablespoons heavy cream
- 1 tablespoon unsalted butter melted

Notes

- Prevent sticking & burning: If you’re having problems with the crepes sticking, wipe the pan with a paper towel dipped in melted butter between crepes rather than adding fresh butter straight to the hot pan. This more evenly coats the pan.
- Resting the batter is key: Do not skip resting the batter for 10–15 minutes. This allows the flour to hydrate and the air bubbles to settle, resulting in tender crepes that won’t tear easily.
- Make-ahead tips: You can cook the crepes a day in advance. Stack them between layers of parchment paper, seal them tightly in a plastic bag, and refrigerate. Reheat individually in a warm skillet or microwave for 10–15 seconds per side before assembly.
